I am not a baker- I never have been. I once attempted to make a strawberry shortcake from scratch and it turned out tasting more like a giant strawberry bagel. It sounds like it could have been good, but it was’t even palatable. Regardless of my baking deficiencies I decided that I wanted to bring dessert to the two Passover Seders I was attending. Not only did I need to figure out something easy I could make, but it had to be completely free of flour.
I always have dried dates at home, so I used them as my recipe research inspiration. I came across a date and nut bar recipe that seemed so easy that even I couldn’t mess it up. Well, let me tell you, I didn’t mess it up and it turned out AMAZING. The whole “cooking” process took 25 minutes and the result was a delicious, gooey and healthy dessert!
I will most definitely make these again- since the base is made up of only nuts and dates, they make a pretty healthy snack if they’re not being served for dessert. It also helps that they’re completely gluten free.
- 1 cup almonds
- 1/2 cup cashews
- 1 cup dates (soaked for 5 minutes then drained)
- 1 cup of dark chocolate chips
- In a food processor pulse together the nuts and drained dates until they are well combined. You’ll know when it’s ready when there are no big pieces of the nuts left.
- Line an 8 by 8 baking dish with parchment paper and press in your nut and date mixture evenly into the pan.
- In the microwave, carefully melt your chocolate chips.
- Pour the chocolate over your date and nut mixture and spread the chocolate evenly over the mixture with a spatula.
- Place the baking dish in the fridge for 20 minutes.
Remove the baking dish from the fridge and pull the bars out of the dish on the parchment paper. Cut the bars into small square and enjoy!
